The Chip was opened by Ronnie Clydesdale on the 11th January 1971, at a time when Scottish cuisine was confined solely to the home. Chefs of the day knew only Italian or French cooking.
In the early years, to suggest that Scotland had a legitimate unique cuisine was an anathema.
From day one The Chip drew its inspiration from regional Scottish dishes. Aunties, grannies and even folklore were a constant source of influence. Some thought us daft, yet 40 years on Ronnie’s faith in Scottish cuisine has been embraced across the country and Scottish produce is deservedly acclaimed as some of the best in the world.
Continually inspired by Scotland’s larder, The Chip has grown to become something of a Glasgow icon. Our courtyard dining room is one of the most endearing magical spaces in Glasgow. A fine dining menu is on offer in the restaurant and a lighter brasserie menu in the various bars, mezzanine and roof terrace.
Throughout the year our menus are dictated by the seasons. Over the decades we have built up a network of specialist suppliers who share our love of food. For locals this ethos has made The Chip a veritable institution.
The Ubiquitous Chip is no stranger to awards, but we never take them for granted. 2011 has seen Ingr3dients nominated for 5 various Cultural and Experiential categories at the Scottish and UK Events Awards, and the Arts & Business Scotland Awards. The late Ronnie himself was recognised this year by his peers with the CIS lifetime achievement award.
